INGREDIENTS

  • 3 slices bacon chopped
  • 3 cloves garlic thinly sliced
  • 1 bunch asparagus trimmed, cut into 1-inch pieces

  • 1 bunch scallions thinly sliced, divided
  • Kosher salt and pepper to taste

MINT MUSTARD SAUCE:

  • 1/2 cup extra-virgin olive oil
  • 3 cloves garlic smashed
  • 3 Tablespoons whole grain mustard
  • 2 Tablespoons white wine vinegar
  • 1 Tablespoon honey
  • 1/3 cup mint leaves
  • Kosher salt and pepper , to taste
